Fuyu Persimmon Appetizer
Ingredients:
Fuyu Persimmons
Cream Cheese or Ricotta Cheese
Cream Cheese or Ricotta Cheese
Grated Parmesan
Nuts, roughly chopped (pistachios, almonds, cashews)
Pomegranate seeds
Mint leaves or Parsley, chopped

Direction:
- Using a serrated knife, thinly slice the persimmons into 1/4″ rounds. Place on a serving platter.
- Top the persimmon slices with scoops of Cream Cheese or Ricotta Cheese .
- Sprinkle with chopped Pistachio , Mint leaves, Grated Parmesan and Pomegranate.
- Serve as rounds or cut into quarters.

Mint Leaves - Mint is a great appetizer or palate cleanser, and it promotes digestion. It also soothes stomachs in cases of indigestion or inflammation.
